- ~4 cups carrot ribbons (about 4–5 large carrots, peeled with a vegetable peeler)
- 1 cup fresh mango, diced (about 1 medium-sized mango)
- 2/3 cup shelled edamame, thawed
- 1-2 green onions, thinly sliced
- 1/4 cup fresh cilantro, roughly chopped
- 1-2 tbsp sesame seeds (adjust to taste)
Dressing Ingredients
- 2 tbsp soy sauce (or coconut aminos for gluten-free)
- 1 tbsp toasted sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey (or maple syrup)
- 1 clove garlic, minced
- 1-2 tsp fresh ginger, finely minced (add more to taste)
- Juice of one fresh lime
- Salt and pepper to taste
Instructions
- Prepare Carrot Ribbons: Peel the carrots to remove the rough outer skin. Hold each carrot firmly and use a vegetable peeler to shave long ribbons along the length, rotating as you go until you reach the core. Aim for approximately 4 cups of carrot ribbons.
- Combine Salad Ingredients: In a large bowl, add the carrot ribbons, diced mango, thawed edamame, sliced green onions, and chopped cilantro.
- Make Dressing: In a small bowl, whisk together soy sauce (or coconut aminos), toasted sesame oil, rice vinegar, honey (or maple syrup), minced garlic, fresh ginger, lime juice, and a pinch of salt and pepper until well combined.
- Toss Salad: Pour the dressing over the salad ingredients and stir thoroughly so everything is evenly coated with the dressing.
- Adjust and Serve: Taste the salad and adjust salt or seasoning as preferred. Add more ginger if desired for a stronger flavor. Sprinkle sesame seeds on top and serve immediately, or refrigerate for 30 minutes to enhance flavor. Enjoy!
