  • Total Time: 35 minutes
  • Yield: Serves 4 as a main dish or 6 as a side dish

Ingredients

For the Chicken:

  • Grilled Sesame Chicken (prepared according to grilled sesame chicken recipe)

For the Salad:

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • ½ cup diced green onion
  • ¾ cup freshly diced cilantro
  • 1 cup shredded carrots (bagged or cut into matchsticks)
  • 1 red bell pepper, thinly julienned
  • 1 jalapeno, seeded and diced

For the Dressing:

  • 1 batch Sesame Ginger Dressing (prepared separately)

For Serving:

  • ⅓ cup toasted sliced almonds
  • ⅓ cup roasted cashew halves
  • Sesame seeds, to taste
  • Extra cilantro, for garnish
  • Extra green onion, chopped, for garnish
  • Few jalapeño slices
  • Optional: Crispy wonton strips

Instructions

  1. Marinate the Chicken: Prepare the grilled sesame chicken by marinating the chicken pieces according to the grilled sesame chicken recipe instructions to infuse flavors. Set aside.
  2. Make the Dressing: Prepare a batch of sesame ginger dressing and set it aside for assembling the salad.
  3. Assemble the Salad: In a large bowl, combine shredded green cabbage, shredded red cabbage, diced green onion, freshly diced cilantro, shredded carrots, julienned red bell pepper, and diced jalapeno. Pour the prepared sesame ginger dressing over the salad mixture and toss thoroughly to coat all the vegetables evenly. Cover and set aside.
  4. Cook the Chicken: Grill or bake the marinated chicken according to the grilled sesame chicken recipe until fully cooked and juicy.
  5. Serve the Salad: Transfer the dressed salad onto a large serving platter. Arrange the grilled sesame chicken on top or alongside. Garnish the salad with toasted sliced almonds, roasted cashew halves, a sprinkle of sesame seeds, extra cilantro, additional chopped green onion, and a few jalapeno slices. Optionally, add crispy wonton strips for extra crunch. Serve immediately.

Notes

  • For best results, prepare the grilled sesame chicken fresh or use leftovers.
  • The salad can be made ahead and refrigerated, but add nuts and crispy wontons just before serving to maintain crunchiness.
  • Adjust the jalapeño amount to control the heat level.
  • Use bagged shredded carrots for convenience and consistent texture.
  • This salad works well as a main dish serving 4 or as a side dish for 6.
