Ingredients
Green Onions
- 1 bunch green onion (about 2.5 oz per bunch)
Oil and Sauce
- ½ cup neutral oil (avocado oil recommended)
- 6 tablespoons premium soy sauce
- 3 tablespoons dark soy sauce
- 2 tablespoons granulated sugar
Noodles
- 1 pound thin wheat noodles (about 4 oz or 115g per serving)
Instructions
- Prepare the green onions: Cut the green parts of the green onions into 2-inch pieces. Split the white parts and cut them into thin strips, discarding the roots. Make sure the green onions are dry to prevent oil splattering during frying.
- Make the sauce mixture: Combine both the premium soy sauce and dark soy sauce along with the granulated sugar. Stir well to dissolve the sugar and set aside.
- Heat the oil: In a saucepan, heat the neutral oil to about 235°F (113°C). To test, insert a wooden chopstick or spoon; a constant stream of small bubbles indicates it’s ready.
- Fry the green onions: Reduce heat to medium-low and add both the white and green parts of the green onions to the hot oil. Gently stir and fry slowly until golden brown, about 5 minutes. Remove and drain on paper towels.
- Simmer the sauce: Add the prepared soy sauce mixture to the scallion-infused oil in the pan. Bring to a gentle simmer over medium-low heat and cook for 1-2 minutes to meld the flavors.
- Cook the noodles: Bring a large pot of water to a boil and cook the wheat noodles until al dente. Drain but do not rinse to preserve the starch, which helps the sauce stick and keeps the noodles creamy.
- Assemble the dish: Divide the noodles into servings and top each with 2 tablespoons of the scallion oil sauce. Stir the sauce well before spooning to distribute oil and sauce evenly.
- Garnish and serve: Sprinkle the fried scallions over the noodles, mix gently to combine, and serve immediately while hot for best flavor and texture.
Notes
- Dry the green onions thoroughly before frying to avoid dangerous splattering of hot oil.
- Do not rinse the noodles after cooking; leaving the starch helps the sauce cling better and enhances creaminess.
- You can substitute other neutral oils if avocado oil is not available, such as vegetable or canola oil.
- For a spicier kick, consider adding a drizzle of chili oil or some fresh chili flakes when serving.
