Instructions
- Shred the cabbage: Remove the core by cutting at an angle where the cabbage stems and leaves meet. Slice the cabbage wedges thinly or shred them with a food processor fitted with a slicing blade or a mandoline slicer. If the cabbage is wet, pat it dry to prevent sogginess while sautéing.
- Sauté the cabbage: Heat a large cast iron skillet over medium-high heat. Add 3 tablespoons of extra virgin olive oil and allow it to shimmer. Add the shredded cabbage, sliced onions, and minced garlic to the pan. Although it may seem crowded, the cabbage will cook down significantly.
- Season and caramelize: Sprinkle a generous pinch of kosher salt, crushed red pepper flakes (or Aleppo pepper), and ground coriander over the cabbage mixture. Continue to cook, tossing occasionally, until the cabbage softens and develops a beautiful caramelized color, which enhances its sweetness and flavor.
- Finish with lime juice and serve: Remove the skillet from heat and squeeze fresh lime juice over the cabbage. For an extra layer of richness and tang, drizzle the sautéed cabbage with creamy feta dressing or tahini sauce before serving. Enjoy warm as a delicious side dish.
