This hearty Sausage and Tortellini Soup combines spicy Italian sausage with tender cheese tortellini in a flavorful tomato and chicken broth base, enriched with cream and topped with Parmesan cheese for a comforting and satisfying meal.

  • Total Time: 40 minutes
  • Yield: 12 servings

Ingredients

Main Ingredients

  • 1 pound ground hot Italian sausage
  • 3 carrots, peeled and diced
  • 1 large white onion, diced
  • 1 tablespoon minced garlic
  • 4 cups chicken stock
  • 29 ounces diced tomatoes (from two 14.5 ounce cans)
  • 16 ounces cheese tortellini
  • 1 cup heavy cream
  • Parmesan cheese, for serving
  • Kosher salt, to taste

Instructions

  1. Brown the Sausage: In a large soup pot or heavy-bottomed Dutch oven, brown the ground hot Italian sausage over medium-high heat until it is crispy and cooked through. Use a slotted spoon to remove the sausage and transfer it onto a paper towel-lined bowl to drain excess fat. Set aside.
  2. Sauté Vegetables: Reduce the heat to medium and add the diced carrots and onions to the same pot. Sprinkle with a pinch of kosher salt and stir to coat the vegetables. Add a splash of chicken stock to deglaze the pan, scraping up browned bits. Cook the vegetables until they begin to soften, about 3 minutes.
  3. Add Garlic and Liquids: Stir in the minced garlic and cook for another minute until fragrant. Add the remaining chicken stock and the diced tomatoes to the pot. Taste the broth and adjust seasoning with kosher salt as needed. Increase the heat to medium-high and bring the soup to a boil.
  4. Cook Tortellini and Combine: Stir in the cheese tortellini and the cooked sausage back into the pot, ensuring everything is well combined. Let the soup cook until the tortellini are tender, approximately 5 minutes. Taste and add more kosher salt if necessary.
  5. Finish with Cream: Remove the soup from heat and stir in the heavy cream to add richness and a smooth texture.
  6. Serve: Ladle the soup into bowls and sprinkle with freshly grated Parmesan cheese if desired. Serve hot and enjoy!

Notes

  • Use hot Italian sausage for a spicy kick; mild sausage can be substituted for a milder flavor.
  • Tortellini can be fresh or frozen; adjust cooking time slightly if using fresh.
  • Deglazing the pan adds extra flavor by incorporating the browned bits into the soup.
  • For a lighter version, substitute heavy cream with half-and-half or milk.
  • Season the soup gradually, tasting as you go to avoid over-salting.
