Ingredients
Vegetables
- 1 pound baby Yukon gold or baby red potatoes, chopped into bite-size chunks
- 8 ounces baby carrots (half of a 16 ounce bag)
- 1/2 large white or yellow onion, chopped
- 8 ounces (about 2 cups) fresh broccoli florets
Protein
- 12-13 ounces smoked sausage, sliced (chicken or turkey sausage recommended, but any favorite sausage works)
Seasonings & Oil
- 6 tablespoons olive oil or avocado oil, divided
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
Instructions
- Preheat Oven: Preheat the oven to 400°F (205°C). Line a very large sheet pan (approximately 15×21 inches) or two smaller sheet pans with parchment paper and set aside.
- Prep Vegetables: Rinse and chop the unpeeled baby potatoes into small, bite-sized pieces. Chop or slice the onion into small pieces.
- Season Potatoes, Carrots, and Onion: Place the potatoes, carrots, and chopped onion on the prepared sheet pan. Drizzle with 4 tablespoons of olive oil and sprinkle with salt, garlic powder, onion powder, and paprika. Use your hands or a spatula to toss everything thoroughly to ensure even coating with oil and seasonings. Spread the vegetables out evenly on the pan.
- First Roast: Place the sheet pan in the preheated oven and roast for 20 minutes.
- Prep and Add Broccoli: Meanwhile, prepare the broccoli florets by ensuring they are small and bite-sized. After 20 minutes, remove the sheet pan from the oven and stir the potatoes, carrots, and onions. Push these veggies to one side of the pan, then add the broccoli to the empty side. Drizzle the remaining 2 tablespoons of olive oil on the broccoli and season with an extra dash of salt, garlic powder, onion powder, and paprika. Toss to coat the broccoli evenly.
- Second Roast: Return the pan to the oven and roast for another 10 minutes.
- Prepare Sausage & Final Roast: While the vegetables roast, slice the smoked sausage into bite-sized pieces. Remove the pan from the oven after 10 minutes, stir the vegetables again, then evenly distribute the sliced sausage on top. Return the pan to the oven for a final 10 minutes of roasting.
- Serve: Remove the pan from the oven, allow to cool slightly, then serve the sausage and vegetables warm. Enjoy your hearty one-pan meal!
Notes
- You can substitute sweet potatoes for the baby potatoes for a sweeter twist.
- Use your favorite smoked sausage variety; chicken or turkey sausages are leaner options.
- Adjust seasoning amounts according to your taste preferences.
- Make sure to space out the vegetables well on the sheet pan to ensure even roasting and caramelization.
- Leftovers can be refrigerated and reheated in the oven or microwave for quick meals.
