Ingredients
Main Ingredients
- 1 Tablespoon olive oil
- 1 Bunch asparagus (cut into 2-inch pieces)
- 2 Cups peas (fresh or frozen)
- 1 Tablespoon garlic (minced)
- 6 Ounces salmon filet (cut into 4 pieces)
- ½ Teaspoon salt
- ½ Teaspoon black pepper
Sauce Ingredients
- 2 Tablespoons butter
- ½ Cup white wine (dry)
- ½ Cup chicken broth
- 2 Teaspoons cornstarch
- 3 Tablespoons lemon juice (fresh)
- ¾ Teaspoon thyme (dried)
- ¾ Cup heavy cream
- ⅓ Cup parmesan cheese
Garnishes
- Lemon zest (from 1 whole lemon)
- 1 Tablespoon parsley (freshly chopped)
- 1 green onion (sliced)
Instructions
- Prepare the Pan and Salmon. Heat a large skillet over medium heat and add the olive oil. Season the salmon pieces with salt and black pepper and place them skin side up in the hot pan to begin cooking.
- Cook the Salmon (first side). Let the salmon cook for about 2 minutes or until the bottom side is slightly browned, then carefully flip the pieces over so the skin side is down.
- Finish Cooking Salmon. Cook the salmon for an additional 3 to 4 minutes until the fish is fully cooked through. Remove the salmon from the skillet and keep warm.
- Sauté the Vegetables. In the same skillet, melt the butter. Add the asparagus pieces and cook for 3 minutes, then add the peas and cook for another 4 minutes. Stir in the minced garlic and cook for one more minute. Remove the vegetables from the skillet and keep warm alongside the salmon.
- Start the White Wine Sauce. Pour the white wine into the empty skillet used for cooking salmon and vegetables.
- Thicken the Sauce. In a small bowl, mix the cornstarch into the chicken broth until smooth. Pour this mixture into the skillet with the white wine. Add fresh lemon juice and dried thyme, then whisk continuously until the sauce thickens.
- Add Cream and Cheese. Stir in the heavy cream and warm it through the sauce. Next, add the parmesan cheese and allow it to melt completely into the sauce.
- Combine Salmon and Vegetables with Sauce. Return the cooked salmon pieces and sautéed vegetables to the skillet. Stir gently to coat everything well in the creamy white wine sauce.
- Add Garnishes and Final Touches. Stir in the sliced green onion for fresh flavor. Serve the dish garnished with fresh parsley and lemon zest sprinkled over the top for brightness and color.
Notes
- Use dry white wine such as Sauvignon Blanc or Pinot Grigio for the best flavor in the sauce.
- For a dairy-free alternative, substitute heavy cream with coconut cream and omit parmesan cheese.
- Ensure not to overcook the salmon to maintain its moist and tender texture.
- Fresh peas can be used when in season, otherwise frozen peas work perfectly.
- This dish pairs well with steamed rice, mashed potatoes, or crusty bread to soak up the sauce.
