Ingredients

For the Sabudana Vada

  • 1 cup sabudana (tapioca pearls), best bought from Indian stores
  • 2 medium yellow potatoes (about 2 cups mashed potatoes)
  • ½ cup roasted and ground peanuts
  • 1 teaspoon ground cumin
  • 1 teaspoon crushed green chilies
  • ¼ teaspoon Kashmiri red chili powder (optional)
  • 2 teaspoons lemon juice
  • 2 teaspoons kosher salt
  • 1 teaspoon sugar
  • 3 tablespoons oil (or more for deep frying)
  • 1 tablespoon chopped cilantro (optional)

For the Sweet and Spicy Peanut Yogurt Chutney

  • 1 cup plain yogurt
  • ¼ cup roasted and ground peanuts
  • 1 to 2 teaspoons Kashmiri red chili powder
  • 2 teaspoons sugar
  • 1 teaspoon kosher salt
  • ¼ cup water

Instructions

  1. Soak Sabudana: Rinse the sabudana pearls thoroughly and drain all water. Add 1 cup of fresh water to the rinsed sabudana and let it soak for 4 to 6 hours or overnight until they become soft and plump.
  2. Prepare Potatoes: Steam, peel, and mash the potatoes until smooth. For best results, steam them using an Instant Pot by placing medium-sized potatoes on a trivet inside with 1 cup of water, pressure cooking for 12-15 minutes and allowing natural pressure release. Cool completely before mashing.
  3. Make Vada Mixture: In a medium bowl, combine soaked sabudana, mashed potatoes, roasted and ground peanuts, ground cumin, crushed green chilies, Kashmiri red chili powder, lemon juice, 1 tablespoon oil, kosher salt, and sugar. Knead gently until well incorporated. This mixture forms the base for the vadas.
  4. Shape Vadas: Take about 2 tablespoons of the mixture and shape into balls. If using the paniyaram pan method, keep as balls. For deep frying or air frying, gently flatten the balls into 2-inch discs, smoothing edges for even cooking. This recipe makes approximately 22 vadas.
  5. Traditional Deep Frying: Heat enough oil in a medium frying pan on low-medium heat. Once hot, add 2-3 flattened vadas carefully. Fry until the outsides turn light golden brown and crisp, being cautious as sabudana pearls may cause splattering. Remove and drain excess oil on paper towels.
  6. Air Frying Method: Preheat the air fryer to 390°F (200°C). Lightly spray the air fryer basket with oil. Place 4-6 flattened vadas spaced apart in the basket. Air fry for 8 minutes. Flip carefully using tongs, brush the tops with a little oil, and air fry for an additional 8-10 minutes until crispy and golden.
  7. Paniyaram/Aebleskiver Pan Method: Heat the paniyaram or aebleskiver pan on medium-low heat. Put a few drops of oil in each round mold. Place one vada ball in each mold and cover. Cook for 4-5 minutes. Flip gently using chopsticks or a small spoon, drizzle a few more drops of oil on top, and cover again. Cook for another 4-5 minutes or until golden brown and crisp. The center vadas tend to cook faster; remove them first.
  8. Prepare the Chutney: In a medium bowl, whisk together plain yogurt, roasted and ground peanuts, Kashmiri red chili powder, sugar, kosher salt, and water until smooth. Adjust seasoning to taste.
  9. Serve: Serve the hot sabudana vadas immediately with the sweet and spicy peanut-yogurt chutney as a delicious snack or light meal.

Notes

  • Soaking time for sabudana is critical; soaking overnight or at least 4 hours gives the best texture.
  • Let mashed potatoes cool completely before mixing to avoid premature cooking of the sabudana mixture.
  • Flattened vadas fry and air-fry better than round balls for crispiness.
