Soaking
- 1 cup sabudana (also known as sago or tapioca pearl)
- 1 cup water (for soaking)
Cooking
- 2 tablespoons ghee
- 1 tablespoon cumin seeds
- 2 green chilies (minced)
- 10 curry leaves (optional)
- 1 medium potato (peeled and thinly sliced into 1-inch squares)
- ⅓ cup roasted ground peanuts (roughly ground)
- 1½ teaspoons kosher salt (divided)
- 2 teaspoons sugar
- 2 teaspoons lemon juice
- ¼ cup cilantro (finely chopped)
Instructions
- Soak the Sabudana: Rinse sabudana thoroughly under running water and drain all excess water. Add 1 cup of fresh water and soak the sabudana for 4 to 6 hours or overnight until they become soft and plump.
- Prepare the Tempering: Heat 2 tablespoons of ghee in a nonstick pan over medium heat. When hot, add 1 tablespoon cumin seeds and allow them to sizzle and release their aroma.
- Sauté Aromatics and Potatoes: Reduce the heat to low and add 10 curry leaves (if using), 2 minced green chilies, sliced potatoes, and half (¾ teaspoon) of the kosher salt. Mix well, cover the pan, and cook for 3 to 4 minutes until potatoes are partly tender.
- Cook Sabudana and Peanuts: Add the soaked sabudana pearls, ⅓ cup roasted ground peanuts, and the remaining ¾ teaspoon salt. Stir gently to combine. Cover and cook on low heat for about 5 minutes or until the sabudana pearls turn translucent and soft.
- Season and Garnish: Stir in 2 teaspoons sugar, 2 teaspoons lemon juice, and ¼ cup finely chopped cilantro. Mix thoroughly to combine all flavors. Serve immediately, optionally with plain yogurt on the side.
Notes
- Soaking time is crucial for properly cooked sabudana; under-soaked pearls will remain hard.
- Roasting the peanuts at home enhances their flavor but use store-bought roasted peanuts for convenience.
- Curry leaves add authentic flavor but can be omitted if unavailable.
- Adjust green chilies according to desired spice level.
- Serving sabudana khichdi with plain yogurt balances the flavors and adds creaminess.
