Ingredients
Butternut Squash
- 2 to 2½ pounds butternut squash, quartered
- 1 tablespoon olive oil
- Kosher salt, to taste
Roasted Garlic
- 1 large head of garlic (top 1/3 cut off)
- Olive oil (from the 1 tablespoon, reserved for garlic)
- Kosher salt, pinch
- Freshly ground black pepper, to taste (optional)
Whipped Squash Mixture
- 4 tablespoons unsalted butter
- 1/2 teaspoon kosher salt
- Freshly ground black pepper, to taste
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) so it is ready for roasting the squash and garlic.
- Prepare and Season Squash: Quarter the butternut squash and arrange it on a rimmed baking sheet. Lightly brush or drizzle the squash with olive oil and sprinkle with a pinch of kosher salt for seasoning.
- Prepare the Garlic: Cut off the top third of the garlic head, exposing the cloves. Place the garlic on a piece of foil, drizzle with the remaining olive oil, season with salt, and add freshly ground black pepper if desired. Fold and crimp the foil tightly into a pouch, then place it on the baking sheet with the squash.
- Roast Squash and Garlic: Roast both the squash and garlic pouch for 55 minutes. After 55 minutes, remove the garlic pouch and let the garlic cool. Continue roasting the squash alone for another 25 to 30 minutes, or until it becomes very tender. Allow the squash to cool until safe to handle.
- Combine Ingredients: Using a spoon, scoop out the flesh of the roasted squash into the bowl of a food processor fitted with a blade attachment. Add the unsalted butter and all of the roasted garlic cloves by squeezing or picking them out with a fork. Season with 1/2 teaspoon kosher salt and freshly ground black pepper to taste.
- Process to Whip: Secure the lid on the food processor and blend until the mixture is very smooth and creamy. Taste and adjust seasoning with additional salt and pepper as desired.
Notes
- Roasting the garlic in foil helps mellow its flavor, bringing out sweetness and reducing sharpness.
- For a dairy-free version, replace butter with olive oil or vegan butter alternatives.
- If you do not have a food processor, a blender or hand mixer can be used, but may require more liquid or effort.
- Adjust seasoning carefully after blending to suit your taste preferences.
