Ingredients
Toffee Layer
- 1 cup (227g) unsalted butter
- 1 cup (220g) dark brown sugar
Base
- 1 box (180g) Ritz Snowflake Crackers (original Ritz crackers can be substituted)
Topping
- 1 bag (250g) semi-sweet chocolate chips
Instructions
- Prepare the Base: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil. Arrange the Ritz crackers in a single, tightly-packed layer on the prepared baking sheet.
- Make the Toffee: In a medium saucepan, melt the unsalted butter over medium heat. Stir in the dark brown sugar and continue cooking, stirring constantly, until the mixture reaches a gentle boil. Allow it to boil for 3 to 4 minutes while stirring continuously to develop the toffee consistency.
- Pour the Toffee over Crackers: Immediately pour the hot toffee mixture evenly over the layer of Ritz crackers, ensuring all crackers are coated. Spread gently with a spatula if needed.
- Bake the Toffee and Crackers: Place the baking sheet in the preheated oven and bake for about 5 minutes, or until the toffee is bubbly and bubbling around the edges.
- Add Chocolate Topping: Remove the baking sheet from the oven. While the toffee is still hot, sprinkle the semi-sweet chocolate chips evenly over the top. Let them sit for a few minutes until melted.
- Spread the Melted Chocolate: Using a spatula, spread the melted chocolate evenly over the toffee and cracker layer.
- Cool and Set: Allow the dessert to cool completely at room temperature for about 1 hour, or place in the refrigerator for faster setting. Once fully set, break into pieces and serve.
Notes
- Using parchment or foil on the baking sheet simplifies cleanup.
- Original Ritz crackers or Ritz Snowflake crackers both work well.
- For a festive touch, sprinkle chopped nuts or sea salt on the melted chocolate before it sets.
- Store in an airtight container at room temperature or refrigerated for up to one week.
- Be careful when handling the hot toffee mixture to avoid burns.
