- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cups chopped brown mushrooms
- 4 cloves garlic, smashed
- 4 tablespoons tomato paste
- 2 cups chicken or vegetable stock (use more if thinner gravy desired)
- ¼ cup red wine or additional stock
- 2 tablespoons chopped fresh sage
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary
- Salt and pepper, to taste
Instructions
- Sauté Onion and Mushrooms: Heat the olive oil in a large frying pan over medium-high heat. Add the chopped onion and cook for 3-4 minutes until translucent. Then add the chopped brown mushrooms and continue cooking, stirring occasionally, for about 8 minutes until the mushrooms soften and start to brown.
- Add Garlic and Tomato Paste: Stir in the smashed garlic cloves and tomato paste, allowing the tomato paste to caramelize for about a minute while stirring constantly to develop its rich flavor.
- Simmer with Herbs and Liquids: Pour in the chicken or vegetable stock, red wine (or additional stock), and add the chopped fresh sage, thyme, and rosemary. Scrape the bottom of the pan thoroughly to loosen any browned bits. Let the mixture simmer for a few minutes to blend the flavors well.
- Blend until Smooth: Carefully transfer the gravy mixture into a blender. Blend on high speed until the gravy reaches a smooth, velvety consistency. Return to the pan if needed for additional warming.
- Season and Serve: Taste the gravy and season with salt and pepper as desired. Serve warm alongside your favorite dishes.

- For a thinner gravy, add extra stock during simmering or before blending.
- This gravy is naturally gluten-free and can be made vegan by using vegetable stock.
