Pickling Ingredients
- 2 red onions
- 2 teaspoons kosher salt
- Freshly cracked black pepper, to taste (about 1/2 teaspoon)
- 1/2 cup lemon juice (about 3 lemons, or more)
Instructions
- Slice the onions: Thinly slice 2 red onions using a sharp knife. Place the slices into a medium-sized bowl.
- Add salt and pepper: Sprinkle 2 teaspoons of kosher salt over the sliced onions. Add freshly cracked black pepper to taste, about 1/2 teaspoon or more depending on your preference.
- Add lemon juice: Squeeze the juice from at least 3 lemons (or limes) over the salted onions. Use about 1/2 cup of lemon juice or more as desired to cover the onions.
- Stir and marinate: Stir the mixture to combine all ingredients well. Let the onions sit for a minimum of 5 minutes to start pickling. For best results, allow them to pickle for at least 30 minutes or up to 2-3 hours, stirring occasionally.
- Serve: Use the quick pickled onions as a flavorful topping for turkey burgers, tacos, gyros, veggie sandwiches, pozole soup, quesadillas, burrito bowls, salads, or any dish that could use a fresh, tangy hit.
- Store leftovers: Transfer leftovers along with the lemon and salt brine into a tightly sealed container like a glass jar or Tupperware. Refrigerate and use within 2 weeks.
Notes
- Feel free to adjust the amount of lemon juice to fully cover the onions for better pickling.
- Pickled onions can be customized with additional spices like chili flakes or herbs if desired.
- The onions will develop a deeper pink color and mellower flavor if left to pickle longer.
