Pickling Marinade

Instructions
- Prepare the Beets: Boil or roast the medium beets until tender, then peel and slice them into evenly sized pieces for uniform pickling and flavor absorption.
- Combine in Jar: Place the sliced beets along with the fresh dill or chosen herbs into a large, sealable jar, ensuring the herbs are evenly distributed among the beets for balanced flavor.
- Make the Marinade: In a measuring cup or bowl, mix the hot water, white vinegar, sugar, salt, and whole peppercorns, stirring until all the sugar and salt have completely dissolved.
- Pour Marinade Over Beets: Carefully pour the pickling marinade over the beets and herbs in the jar, making sure the beets are fully submerged to prevent spoilage and ensure even pickling.
- Refrigerate and Pickle: Seal the jar tightly and refrigerate for at least 24 hours to allow the flavors to develop. The pickled beets will develop more flavor over time and can be stored refrigerated for up to 2 weeks.
- Serve: Use the pickled beets chilled in salads, soups, or as part of appetizer boards to add tangy, vibrant flavor.
