Sauce
- 4 teaspoons cornstarch
- 2 tablespoons dark soy sauce
- 2 tablespoons light soy sauce
- 1 teaspoon sesame oil
- 2 teaspoons sugar
- 1 tablespoon Chinese cooking wine or Mirin
Lo Mein
- 6-8 ounces uncooked ramen noodles
- 1 tablespoon sesame oil
- 3 garlic cloves, minced or pressed
- 3 green onions, chopped (separate white parts and green parts)
- 2 cups cremini mushrooms, sliced
- 1 red bell pepper, julienned
- 1 carrot, julienned
- ½ cup snow peas
- 3 cups baby spinach
Instructions
- Prepare the sauce: In a small bowl or jar, whisk together the cornstarch with dark soy sauce until smooth. Then add the light soy sauce, sesame oil, sugar, and Chinese cooking wine or Mirin. Whisk or shake well to combine and set aside.
- Cook the noodles: Boil the ramen noodles according to the package instructions until just tender. Drain thoroughly and set aside.
- Stir-fry the vegetables: Heat 1 tablespoon of sesame oil in a large wok or skillet over medium-high heat. Add the minced garlic and the white parts of the green onions, followed by the mushrooms, red bell pepper, and carrots. Stir frequently and cook until the vegetables are tender but still vibrant, about 3 to 4 minutes.
- Add snow peas and spinach: Toss in the snow peas and baby spinach, cooking for an additional 2 to 3 minutes until the spinach wilts and the peas are bright and crisp-tender.
- Toss noodles with sauce: Add the cooked noodles to the wok along with the prepared sauce. Gently toss everything together, cooking for about 1 minute until the noodles are evenly coated and the sauce thickens slightly.
- Serve: Remove from heat and garnish with the sliced green parts of the green onions cut on the diagonal. Serve immediately for the best texture and flavor.

- Dark soy sauce adds a richer color and saltier flavor, while light soy sauce contributes a lighter, more delicate taste—both combined give balance.
- Chinese cooking wine or Mirin enhances the depth and adds slight sweetness; substitute dry sherry if unavailable.
