Ingredients
Whipped Feta Dip
- Approx. 8 oz block of feta cheese, drained from brine (around 220 grams)
- 1/4 cup plain Greek yogurt (use a higher fat option for less tartness)
- 1 cup canned pumpkin puree (unsweetened)
- 1-2 Tbsp honey (plus more for serving)
- 1 tsp dried thyme (or 2 tsp fresh thyme)
- Black pepper, freshly cracked, to taste
Toppings
- Fresh thyme (can use dried if needed)
- Chopped walnuts (optional, raw or toasted)
- Extra honey drizzle
Serve With
- Crusty toasted bread (such as sourdough or baguette)
- Crackers
Instructions
- Blend Feta and Greek Yogurt: Place the drained feta cheese and Greek yogurt into a food processor. Blend for several minutes until completely smooth, stopping to scrape down the sides with a spatula as necessary.
- Add Pumpkin and Seasonings: Add the canned pumpkin puree, 1 to 2 tablespoons of honey (adjust according to your desired sweetness), dried or fresh thyme, and freshly cracked black pepper to the food processor. Blend again until the ingredients are fully combined into a smooth dip.
- Chill the Dip: Transfer the whipped feta mixture into a covered container and place it in the refrigerator to chill for 30 to 60 minutes. Chilling helps the dip to firm up and flavors to meld.
- Prepare for Serving: When ready to serve, transfer the chilled dip into a large serving bowl. Garnish with a handful of chopped walnuts if using, sprinkle generously with fresh thyme leaves, drizzle extra honey over the top, and add additional black pepper to taste.
- Serve: Present the dip alongside crusty toasted bread or your choice of crackers for dipping. Enjoy this flavorful, autumn-inspired appetizer!
