This Pumpkin Spice French Toast recipe combines the warm, cozy flavors of pumpkin puree and pumpkin pie spice with classic French toast for a perfect autumn breakfast or brunch treat. Made with rich brioche or challah bread slices dipped in a spiced pumpkin-egg custard and cooked to golden perfection on the stovetop, this dish is delicious topped with maple syrup, powdered sugar, butter, whipped cream, or a sprinkle of cinnamon.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

French Toast Mixture

  • 3 large eggs
  • ⅔ cup whole milk
  • ¾ cup pumpkin puree
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 8 – 10 slices brioche, French or challah bread, about 1-inch thick

Optional For Serving

  • maple syrup
  • powdered sugar
  • butter
  • whipped cream
  • cinnamon

Instructions

  1. Prepare the custard mixture: In a large bowl or a shallow baking dish, whisk together the eggs, whole milk, pumpkin puree, brown sugar, vanilla extract, and pumpkin pie spice until well combined and smooth.
  2. Preheat the cooking surface: Heat a large skillet or griddle over medium to medium-low heat. Add butter to the pan and allow it to melt, ensuring the skillet is hot enough before adding bread slices.
  3. Dip and cook the bread: Dip two slices of your chosen bread into the pumpkin-egg mixture, coating both sides thoroughly. Place the soaked bread slices onto the hot skillet. Cook for about 3 to 4 minutes on the first side until golden brown.
  4. Flip and finish cooking: Carefully flip the slices and cook for another 2 to 3 minutes on the other side until cooked through and golden. Remove the French toast from the skillet once done.
  5. Keep warm: If desired, keep the cooked French toast warm by placing them on an oven-safe plate or baking sheet and warming them in an oven preheated to 200°F (93°C).
  6. Repeat and serve: Repeat the dipping and cooking process with the remaining bread slices and custard mixture. Serve warm with your favorite toppings such as maple syrup, powdered sugar, butter, whipped cream, or a sprinkle of cinnamon.

Notes

  • Use thick slices of brioche, challah, or French bread for best results, as they hold up well when soaked in the custard.
  • Make sure the skillet or griddle is hot enough before adding butter and bread to prevent sticking.
  • For a dairy-free version, substitute whole milk with almond or oat milk and use dairy-free butter.
  • Adjust the amount of brown sugar to taste if you prefer it sweeter or less sweet.
  • The pumpkin pie spice can be replaced with a mix of cinnamon, nutmeg, ginger, and cloves if unavailable.
  • To keep French toast warm without drying it, cover loosely with foil while warming in the oven.
