Ingredients
For the Pumpkin Spread
- 2 tablespoons pumpkin purée
- 1 teaspoon Dijon mustard
- 1/8 teaspoon garlic powder
- 1/8 teaspoon smoked paprika
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
For the Sandwich
- 2 tablespoons softened butter
- 2 slices sturdy sandwich bread (use gluten-free if necessary)
- 1/2 cup shredded sharp cheddar cheese (use vegetarian/rennet-free if necessary)
- 1 teaspoon finely chopped fresh sage
- Hot honey (for serving)
Instructions
- Make the Pumpkin Spread: In a small bowl, combine pumpkin purée, Dijon mustard, garlic powder, smoked paprika, salt, and black pepper. Stir well until the mixture is smooth and evenly blended.
- Prepare the Bread: Spread the softened butter evenly on one side of each slice of bread. Heat a skillet over medium-low heat to ensure gentle cooking and prevent burning.
- Assemble the Sandwich: Place one slice of bread in the skillet, buttered side down. On the unbuttered side, evenly spread the pumpkin mixture, then sprinkle the shredded cheddar cheese and chopped fresh sage on top. Cover with the second slice of bread, buttered side facing up.
- Cook the Sandwich: Cook for 3 to 5 minutes on each side, pressing gently with a spatula to ensure even browning and melting. Flip carefully when the underside is golden brown, and continue until both sides are toasted and the cheese is fully melted.
- Serve: Remove the sandwich from the skillet, slice it in half, drizzle generously with hot honey, and serve immediately while warm and melty.
Notes
- Use gluten-free bread if you need a gluten-free option.
- To keep the recipe vegetarian, use vegetarian or rennet-free cheddar cheese.
- Adjust the amount of hot honey to taste for desired sweetness and heat.
- Cooking on medium-low heat prevents the bread from burning before the cheese melts.
- You can substitute fresh sage with dried sage but use sparingly as dried herbs are more potent.
