Ingredients

Chocolate Layer

  • 6 oz baking chocolate (divided: 3 oz semi-sweet, 3 oz unsweetened)
  • 2 tsp coconut oil (divided)

Peanut Butter Filling

  • 1/2 cup natural style, smooth peanut butter
  • 1/3 cup pea protein isolate powder
  • 1/4 cup maple syrup
  • 1 and 1/2 tbsp ground flaxseed
  • 1/2 tsp fine sea salt
  • Coarse sea salt (optional, for sprinkling)

Instructions

  1. Melt the First Chocolate Portion: Roughly chop the chocolate and add half (3 oz) of it along with 1 teaspoon of coconut oil to a microwave-safe bowl. Microwave in 20-second intervals, stirring between each interval until the chocolate is fully melted and smooth.
  2. Prepare Chocolate Cups: Place 12 silicone muffin liners in a muffin tin. Use a spoon to fill the bottom of each liner with about ½ tablespoon of melted chocolate. Tilt the pan or use the back of the spoon to spread the chocolate up the sides of each cup slightly. Place the tin in the freezer for 10 minutes to let the chocolate set firmly.
  3. Make Peanut Butter Filling: In a medium bowl, mix together the peanut butter, maple syrup, pea protein isolate powder, fine sea salt, and ground flaxseed until well combined and smooth. Add a few drops of water if needed to help achieve a smooth consistency.
  4. Shape and Fill Cups: Roll the peanut butter mixture into approximately 1 tablespoon-sized balls, yielding 12 balls. Remove the muffin tin from the freezer and place one peanut butter ball in each chocolate cup. Press down gently to flatten the filling almost to the edges of the cup.
  5. Melt Remaining Chocolate: Add the remaining 3 oz of chopped chocolate and 1 teaspoon of coconut oil to the same microwave-safe bowl. Melt in 20-second intervals, stirring until fully melted and smooth.
  6. Top Peanut Butter Cups: Spoon the melted chocolate over each peanut butter-filled cup, using about ½ tablespoon per cup to fully cover the peanut butter layer. Optionally, sprinkle coarse sea salt on top for added flavor.
  7. Set the Cups: Return the muffin tin to the freezer for 15-20 minutes or until the chocolate topping is completely set and firm.
