Ingredients

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a loaf pan by lining it with parchment paper or greasing it lightly to ensure your banana bread doesn’t stick.
  2. Blend Wet Ingredients: In a high-speed blender or using an immersion blender, blend the ripe bananas, eggs, low fat cottage cheese, and vanilla extract until the mixture is smooth and the cottage cheese is fully incorporated. Pour this wet mixture into a large mixing bowl.
  3. Mix Dry Ingredients: In a separate small bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and baking soda until evenly combined.
