Ingredients
Fruits
- 1/2 – 3/4 lbs. fresh plums, pitted and sliced into eights (large plums) or fourths (medium-small plums)
Nuts
- 3/4 cups whole almonds, toasted
- 3/4 cups whole hazelnuts, toasted
Batter
- 3/4 cups + 2 Tbsp. unsalted butter, at room temperature
- 1 1/2 cups confectioners’ sugar
- 3 large eggs
- 3/4 cup all-purpose flour
- 1 tsp. baking powder
Glaze
- 2-3 Tbsp. apricot preserves
Instructions
- Preheat and prepare pan. Preheat the oven to 375 degrees F and grease and flour a 9-inch springform pan to ensure the torte doesn’t stick during baking.
- Grind nuts. Using a food processor, grind the toasted almonds and hazelnuts until they reach a fine crumb consistency, being careful not to overprocess or the nuts will turn into butter.
- Make batter. In a large bowl, beat the room temperature butter with an electric mixer until creamy. Gradually add the confectioners’ sugar on low speed until fully combined, scraping down the sides as needed. Add the eggs, flour, and baking powder, mixing well. Then gently fold in the ground nuts with a wooden spoon or spatula to maintain a thick batter.
- Assemble torte. Spoon the thick batter evenly into the prepared springform pan, smoothing the top gently.
- Arrange plums. Place the sliced plums on top of the batter in a circular pattern without overlapping to create an appealing presentation.
- Bake torte. Place the pan on the middle rack of the preheated oven and bake at 375°F for 15 minutes. Then lower the oven temperature to 300°F (keeping the torte inside) and continue baking for an additional 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Glaze and serve. Warm the apricot preserves in the microwave for 30 seconds or until runny, then brush it over the top of the baked torte to create a shiny glaze. Allow it to cool slightly before slicing and serving.
Notes
- Make sure nuts are toasted for enhanced flavor before grinding.
- Do not overprocess the nuts to avoid turning them into nut butter.
- You can adjust apricot preserves quantity for a glossier or lighter glaze.
- If plums are very juicy, briefly pat them dry to avoid excess moisture in the torte.
- Allow the torte to cool slightly to help the glaze set and improve slicing.
