  • 1 1/2 cups water
  • 1 cup ice
  • 2 cups kale or spinach
  • 1 green apple (cored and cut into chunks)
  • 1 cup pineapple (fresh or canned with no sugar added)
  • 1/2 cup parsley leaves
  • 1 tablespoon fresh mint
  • 1 medium cucumber (quartered)
  • 2 celery stalks (roughly chopped)
  • 1 inch piece of ginger (peeled)
  • Juice from 1 lemon

Instructions

  1. Prepare Ingredients: Wash all vegetables and fruits thoroughly to remove any dirt or residues. Core and cut the green apple into chunks, quarter the cucumber, and roughly chop the celery stalks. Peel the ginger piece.
  2. Blend the Juice: Add 1 1/2 cups of water into a high-speed blender, then add the ice, kale or spinach, green apple chunks, pineapple, parsley leaves, fresh mint, cucumber, celery, ginger, and lemon juice. Blend on the highest setting for at least one minute, or until the mixture is completely combined and achieves a smooth, smoothie-like consistency.
  3. Strain the Juice: Place a nut milk bag or fine mesh sieve over a large glass measuring bowl. Pour the blended mixture through the bag or sieve, gently squeezing to separate the juice from the pulp. Collect all the liquid and discard or reserve the pulp for other recipes like muffins or crackers.
  4. Serve or Store: Drink the juice immediately for maximum freshness and nutrient content, or transfer it to a sealed glass jar and refrigerate for up to 2 days. Shake well before drinking if refrigerated. Note that this recipe can be easily doubled to make larger batches.
