Ingredients
Dry Ingredients
- 1 tablespoon flour (arrowroot powder, cornstarch, or other flour)
- ¼ teaspoon dried thyme
- Pinch of cayenne pepper
- Kosher salt and freshly ground black pepper (to taste)
Dairy
- 1 cup whole milk
- 2 tablespoons unsalted butter
- 1 cup heavy cream
- Optional: ¼ cup freshly grated parmesan cheese
Vegetables
- 2 tablespoons finely diced shallot
- 5 cups (about two 12-ounce bags) frozen sweet corn, thawed
Instructions
- Dissolve flour: In a small bowl, whisk together the flour and whole milk until the mixture is smooth and free of lumps. Set this mixture aside to be used later as a thickening agent.
- Sauté shallot: Heat a large skillet over medium heat and melt the unsalted butter. Add the finely diced shallot and sauté for about one minute, or until the shallot becomes softened and fragrant, but not browned.
- Mix corn and cream: Add the thawed sweet corn, heavy cream, and dried thyme to the skillet. Stir continuously for 4 to 5 minutes, allowing the corn to plump up and flavors to combine.
- Add milk mixture and thicken: Pour the flour and milk mixture into the skillet with the corn and cream. Continue stirring for another 3 to 4 minutes until the sauce has thickened slightly and coats the corn nicely.
- Blend some corn: Scoop out 1 to 2 cups of the creamed corn and blend it until smooth using a blender or food processor. Alternatively, use a stick blender to partially blend the corn in the skillet a few times for a creamier texture.
- Combine and optional cheese: Return the blended corn to the skillet and stir to combine evenly. If you desire an extra creamy and cheesy flavor, stir in ¼ cup of freshly grated parmesan cheese now.
- Season and serve: Season the creamed corn with a pinch of cayenne pepper, kosher salt, and freshly ground black pepper to taste. Stir well and serve warm as a delicious side dish.
Notes
- Using freshly grated parmesan cheese adds richness but is optional.
- Thawing the frozen corn beforehand ensures even cooking and better texture.
- Arrowroot or cornstarch can substitute for flour for gluten-free options.
- Adjust seasoning carefully to balance the sweetness of the corn and heat from cayenne.
- This recipe yields about 6 servings, perfect for a small family or gathering.
