- Create a double boiler: Fill a small-sized pot about 1/4 full with water and bring it to a boil. Then reduce the heat to a simmer and place a glass bowl on top of the pot, ensuring the bowl doesn’t touch the water.
- Heat the coconut milk: Pour the coconut milk into the glass bowl and warm it for 2-3 minutes until it becomes warm but not boiling, preparing it for melting the chocolate.
- Melt chocolate chips: Add the chocolate chips to the same bowl with the warm coconut milk and stir slowly and continuously until the mixture becomes silky smooth and fully combined.
- Add peppermint extract: Remove the bowl from the double boiler and stir in the peppermint extract thoroughly, infusing the ganache with a refreshing mint flavor.
- Chill the ganache: Transfer the chocolate ganache mixture into the fridge and let it cool and firm up for about 2 hours, so it is easier to shape.
- Form truffle balls: Using a small cookie scoop, scoop out portions of the ganache and gently roll them into balls with your hands, taking care to keep them smooth and even.
- Coat with cacao powder: Immediately roll each ganache ball in cacao powder to coat evenly, then place them on a plate to set.
- Final chilling: Place the plate with cacao-coated truffles in the fridge for about 15 minutes to firm up completely before serving and enjoying.
