Instructions

- Add wet ingredients: Incorporate the sunflower seed butter, pure maple syrup, vanilla extract, peppermint extract, and water into the dry mix. Using a rubber spatula, mix until all ingredients are fully incorporated, resulting in a thick dough.
- Form bites: Use a 1-ounce cookie scoop or spoon to portion 2 tablespoons of dough. Firmly compact and roll the dough into a golf ball-sized sphere. Place each ball on a plate and repeat with the remaining dough.
- Prepare topping: In a small bowl, combine carob or chocolate chips with coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
- Top bites: Drizzle the melted chocolate mixture over each brownie bite evenly.
- Crush peppermint: Place the peppermint candy cane or candies in a sealed zip-top bag, then crush into small bits using a firm utensil like a pot.
