Fruits
- 4-6 peaches, de-stoned (adjust quantity to preference and size of fruit)
- Handful of cherries, de-stoned (optional)
Liquid & Sweetener
- 1 can coconut milk (400 ml)
- 1 tbsp maple syrup (optional)
Instructions
- Prepare the Fruit: Start by pitting the peaches and cherries if using, to ensure no stones remain. This will make blending easier and safer.
- Blend Ingredients: In a blender, combine the de-stoned peaches, coconut milk, and maple syrup. Blend until smooth but leave some chunks of fruit for texture.
- Pour into Molds: Transfer the blended mixture into popsicle molds evenly, leaving a little space at the top for expansion during freezing.
- Freeze Popsicles: Place the filled molds in the freezer for at least 6 hours, or until completely frozen solid.
- Serve: Once frozen, remove the popsicles from the molds and enjoy a cool, creamy, fruity treat.
Notes
- You can adjust the sweetness by adding more or less maple syrup, or omit it for a naturally sweet treat.
- For a smoother texture, blend longer to reduce chunks; for more texture, blend less.
- If you don’t have popsicle molds, use small paper cups with popsicle sticks inserted.
- Make sure to allow at least six hours freezing time to get firm popsicles.
- Optional cherries add a nice tart flavor and extra color but can be omitted if unavailable.
