Ingredients
Chia Pudding Base
- 2 tbsp chia seeds
- 1 tsp honey, maple syrup or agave
- ½ cup coconut milk
Fruit and Toppings
- ½ peach, chopped into small cubes
- Additional chopped peaches for garnish
- Chopped nuts (hazelnuts recommended) for garnish
Instructions
- Combine Ingredients: In a glass or mason jar, add the chia seeds, honey or agave, and coconut milk. Stir together thoroughly until well combined and there are no clumps of chia seeds.
- Add Peach: Chop half a peach into small cubes and add to the mixture. Stir gently to combine, then cover the container.
- Refrigerate to Set: Place the covered container in the refrigerator for a few hours or overnight, allowing the chia seeds to absorb the liquid and thicken into a pudding-like texture.
- Garnish and Serve: When ready to eat, top with additional chopped peaches and chopped hazelnuts for added texture and flavor. Enjoy your peach chia pudding chilled!
Notes
- For a vegan version, use maple syrup or agave instead of honey.
- Make sure to stir well initially to avoid chia seeds clumping together.
- The pudding can be prepared the night before for a quick grab-and-go breakfast.
- Feel free to substitute hazelnuts with other nuts like almonds or walnuts for variety.
- If thicker consistency is desired, add a little more chia seeds or reduce coconut milk slightly.
