For the Cod
- 2 cod fillets (thawed)

Instructions
- Preheat the oven: Heat your oven to 350 degrees Fahrenheit to prepare for baking the cod.
- Toast the breadcrumbs: Melt the butter in a non-stick skillet over medium heat. Add the panko breadcrumbs and stir continuously for 3-4 minutes until they turn golden brown and crispy, then remove from heat and set aside.
- Prepare the baking sheet: Line a baking sheet with aluminum foil and spray it lightly with cooking spray to prevent sticking.
- Season the cod: Place the thawed cod fillets on the prepared baking sheet. Sprinkle each fillet evenly with salt and black pepper.
- Add breadcrumb topping: Evenly distribute the toasted panko breadcrumbs over the seasoned cod fillets, then sprinkle the grated parmesan cheese on top.
- Bake the cod: Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, or until the cod is cooked through and flakes easily with a fork.
- Serve: Remove from the oven, add additional parmesan cheese if desired, and serve the cod warm with fresh lemon wedges on the side for squeezing.
