Ingredients
Protein and Oils
- 2 tbsp avocado oil (divided)
- 1 lb. ground turkey
- 4 eggs
Vegetables and Herbs
- 1 sweet onion (diced to 1/2″)
- 2 cloves garlic (minced)
- 1 zucchini (diced to 1/2″)
- 1 yellow squash (diced to 1/2″)
- 1 bell pepper (diced to 1/2″)
- 1 tbsp fresh parsley (chopped)
Seasonings
- 1/2 tsp dried thyme
- 1/4 tsp dried oregano
- 1/4 tsp red pepper flakes
- Sea salt (to taste)
- Cracked black pepper (to taste)
Instructions
- Saute Onions and Garlic: Heat a 12″ skillet over medium-high heat. Add 1 tablespoon of avocado oil and heat until shimmering. Add the diced sweet onion and sauté, stirring frequently, until the onions are soft and translucent, about 4-5 minutes. Add the minced garlic and continue to sauté until fragrant, approximately 1 minute.
- Cook Ground Turkey with Herbs: Add the ground turkey to the onion and garlic mixture along with the dried thyme, dried oregano, red pepper flakes, sea salt, and cracked black pepper to taste. Sauté, stirring frequently and breaking up the meat, until the turkey is no longer pink and cooked through, about 5-7 minutes.
- Sauté Squash and Bell Pepper: Push the cooked turkey and onion mixture to the edges of the pan. Add 1 teaspoon avocado oil to the center of the pan. Add the diced zucchini and yellow squash into the oil and sauté, stirring frequently, until the squash is tender but still slightly firm, about 5 minutes. Add the diced bell pepper to the pan and stir everything to combine. Continue sautéing the hash, stirring frequently, for another 3-4 minutes until the bell pepper is just barely cooked but still crisp.
- Season and Garnish: Taste the hash and adjust seasoning with more salt and pepper if needed. Divide the hash evenly between 4 plates and sprinkle with fresh chopped parsley for a burst of color and freshness.
- Fry the Eggs: Wipe out the skillet, then add the remaining 2 teaspoons of avocado oil and heat until shimmering. Crack four eggs into the pan, one at a time, and fry them until the egg whites are fully set, about 3-4 minutes for sunny-side up. Top each plate of hash with a fried egg and serve immediately.
Notes
- This dish can be made dairy-free and complies with Paleo and Whole30 eating plans.
- Feel free to swap the ground turkey for ground chicken or lean ground beef if preferred.
- To make it spicier, increase the red pepper flakes to suit your taste.
- For a vegetarian version, omit the turkey and substitute with tofu or additional vegetables.
- Use a non-stick skillet to prevent the eggs from sticking without extra oil.
