- 4 cups rigatoni pasta
- 2 tsp rosemary
- 2 tsp oregano
- 2 tsp thyme
- 2 tsp basil
- 2 tsp marjoram
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt (to taste)
- Pepper (to taste)
- 3 tbsp olive oil
- 2 cups Parmesan cheese
For the Dip
- 100 ml Greek yogurt
- 7 tbsp cream cheese
- 1 tsp garlic, minced
- Salt (to taste)
- Pepper (to taste)
- 2 tsp choice of extra herbs and spices
- 5 cherry tomatoes, sliced
- Optional: olive oil to adjust dip consistency
Instructions
- Prepare Ingredients: Gather all ingredients needed for both the pasta chips and the dip to have everything ready.
- Cook Pasta: Bring a large pot of salted water to a boil and cook the rigatoni pasta until al dente according to the package instructions. Then, drain thoroughly using a colander.
- Preheat Oven: Set your oven to 400°F (204°C). Line a baking sheet with parchment paper and lightly grease it with oil to prevent sticking.
- Arrange Pasta: Spread the cooked pasta in a single layer on the prepared baking sheet, ensuring that the pieces do not overlap or touch to allow even crisping.
- Make Seasoning Mix: In a small bowl, combine olive oil, salt, pepper, garlic powder, paprika, rosemary, oregano, thyme, basil, and marjoram. Pour this mixture evenly over the pasta on the baking sheet.
- Add Cheese and Toss: Sprinkle the pasta generously with Parmesan cheese, then toss gently to ensure each piece is well coated with the seasoning and cheese.
- Bake Pasta Chips: Place the baking sheet in the preheated oven and bake for 10 to 12 minutes, or until the pasta is crispy and golden brown.
- Prepare Dip: In a bowl, blend together Greek yogurt and cream cheese until smooth. Add minced garlic, salt, pepper, and your choice of extra herbs and spices. Mix thoroughly, adding a bit of olive oil if needed to reach your desired dip consistency.
- Finish Dip: Top the prepared dip with sliced cherry tomatoes for a fresh and colorful garnish.
- Serve: Serve the warm, crispy pasta chips alongside the creamy dip and enjoy your snack immediately.
Notes
- Make sure pasta pieces do not overlap on the baking tray to ensure even baking and crispiness.
- You can customize the dip by adding your favorite herbs like dill, chives, or parsley for extra flavor.
- For a spicier kick, add a pinch of cayenne pepper or chili flakes to the seasoning mix.
- This recipe works best with rigatoni or other tubular pasta shapes for optimal crispiness.
- Store any leftover pasta chips in an airtight container to maintain their crunch.
