Ingredients
Fish and Marinade
- 1.5 pounds boneless, skin-on fish fillet

Vegetables
- 2 medium zucchini (about 6 inches each), sliced thin
- Bunch of baby spinach
- 2-3 small gold or fingerling potatoes, sliced thin
- 1 cup snow peas
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C), and lightly coat a sheet pan or casserole dish with olive oil or nonstick cooking spray to prevent sticking.
- Prepare Vegetables: Arrange the thinly sliced zucchini, potatoes, snow peas, and baby spinach in a single, even layer on the prepared sheet pan. Drizzle them with olive oil, and season with sea salt and freshly ground black pepper. Toss or turn the vegetables gently to coat them evenly with the oil and seasoning.
- Assemble Fish: Place the fish fillet on top of the bed of vegetables. Drizzle the fish with additional olive oil and the juice of half a lemon. Evenly sprinkle the minced garlic, chopped parsley, thyme sprigs, and lemon zest over the fish. Add a pinch of salt and pepper to season the fish to taste.
- Bake the Dish: Bake the fish and vegetables in the preheated oven for 20-25 minutes. The cooking time will vary depending on the thickness of the fish fillet; thinner and smaller pieces may cook in as little as 12-15 minutes. The dish is done when the vegetables are tender and the fish flakes easily when tested with a fork.
