Ingredients
Vegetables & Aromatics
- 1 cup sliced carrots
- 4 oz mushrooms, sliced
- 1 large or 2 small ribs celery, thinly sliced
- 1 large shallot or small onion, chopped
- 2 cloves garlic, pressed or minced
Seasonings & Spices
- Homemade seasoned salt and pepper (to taste)
- 1 teaspoon poultry seasoning
- Pinch dried thyme
Thickening & Liquids
- 4 Tablespoons butter or vegan butter
- 3 Tablespoons gluten free flour (or all-purpose flour if not gluten free)
- 2 cups chicken stock or broth
- 1 cup milk (any kind, unsweetened almond milk recommended)
Main Ingredients
- 12 oz package gluten free gnocchi
- 1½ cups shredded cooked chicken breast (~½ lb pre-cooked)
- ½ cup frozen peas
Instructions
- Sauté Vegetables: Heat a Dutch oven or large soup pot over medium-high heat. Melt the butter in the pan, then add sliced carrots, mushrooms, celery, and chopped shallots or onions. Sauté until the mushrooms release their liquid and the liquid evaporates, about 3-4 minutes. Season with homemade seasoning salt and pepper, then continue sautéing on slightly reduced heat until the vegetables are tender, approximately 6-7 more minutes.
- Add Garlic and Spices: Stir in the pressed garlic, poultry seasoning, and dried thyme. Sauté for another 1-2 minutes until the garlic becomes very fragrant, ensuring the spices are well combined with the vegetables.
- Make the Sauce: Sprinkle the gluten free flour evenly over the vegetables and stir to coat everything. Cook for 1 minute to remove the raw flour taste. Slowly pour in the chicken broth while continuously stirring to prevent lumps, then add the milk. Increase heat to medium-high and bring the mixture to a gentle simmer, stirring occasionally.
- Cook Gnocchi and Combine: Add the gnocchi to the simmering sauce and stir to combine. Reduce heat to medium and cook, stirring frequently, until the gnocchi are tender, about 5-6 minutes. Stir in the shredded chicken and frozen peas, heating through. Taste and adjust seasoning with additional seasoned salt and/or pepper if needed.
- Serve: Ladle the creamy gnocchi chicken pot pie into bowls and serve hot, enjoying a flavorful and hearty one-pot meal.
Notes
- Use gluten free flour and gnocchi to keep this dish gluten free.
- Unsweetened almond milk or any preferred milk can be used for a dairy-free or vegan butter option.
- Shredded pre-cooked chicken can be from rotisserie or leftover chicken for convenience.
- Adjust seasoning salt and pepper gradually to suit your taste preferences.
- For a vegetarian version, substitute chicken broth with vegetable broth and omit chicken, adding extra mushrooms or beans for protein.
