Ingredients
Shrimp
- 1.5 lb raw shrimp (peeled and deveined, large – about 15-20 count per pound)
- 1 teaspoon chili powder
- ¼ teaspoon salt (to taste)
- 2 tablespoons olive oil
- 2 tablespoons salted butter
Creamed Corn Sauce
- ½ cup chopped onion
- 5 cloves garlic (minced)
- 1.5 cups cooked corn kernels (about 2 ears grilled or boiled corn)
- 1 teaspoon smoked paprika
- 1 cup half-and-half
- 4 oz feta cheese (divided, crumbled)
Garnishes
- 2 small limes
- Fresh cilantro
Instructions
- Cook shrimp: Heat a large 12-inch skillet over medium heat until hot. Add olive oil and swirl to coat the pan. Sprinkle the shrimp with chili powder and salt, then add them to the skillet in a single layer without overcrowding. Cook, flipping once or twice, until shrimp turn pink and opaque, about 3-4 minutes total. Remove shrimp from skillet and set aside.
- Prepare creamed corn: In the same skillet, add butter and chopped onion. Lightly salt and sauté on medium heat for about 3 minutes until onions soften, stirring occasionally. Add minced garlic and cook for an additional 2 minutes, stirring to prevent burning and reduce heat if necessary.
- Add corn and spices: Stir in cooked corn kernels and smoked paprika, mixing well to combine flavors.
- Add dairy and simmer: Pour in half-and-half and bring the mixture to a gentle simmer. Add 3 oz of the crumbled feta cheese and stir until the cheese melts into the sauce, creating a creamy texture.
- Reassemble and finish: Squeeze juice of half a lime into the sauce. Return the cooked shrimp to the skillet and gently reheat them in the creamy corn sauce without overcooking.
- Garnish and serve: Top the skillet with the remaining corn kernels, lime slices, and chopped fresh cilantro. Optionally, sprinkle extra chili powder or smoked paprika to taste before serving.
Notes
- Do not overcrowd the skillet when cooking shrimp; cook in batches if necessary for even cooking.
- Use fresh or grilled corn for best flavor; canned corn can be used in a pinch but adjust seasoning accordingly.
- Adjust chili powder amount based on your heat preference.
- Use block feta cheese for better melting and texture.
- This dish is best served immediately for optimal creaminess and shrimp tenderness.
