Salmon and Dressing
- 4 skinless salmon filets (about 6 ounces each, patted dry)
- ¼ cup (59 g) Caesar salad dressing
- 1 ½ teaspoons kosher salt, divided
- 1 teaspoon black pepper, divided
- 1 cup (113 g) mozzarella cheese, shredded
- ¼ cup (25 g) Parmesan cheese, freshly grated

- 5 to 6 cups fresh broccoli florets, cut into bite-sized pieces

Instructions
- Preheat oven. Prepare baking sheet. Preheat your oven to 425°F. Line a large rimmed baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
- Toss broccoli with oil and seasoning. Place the broccoli florets on the baking sheet, drizzle with 2 tablespoons of olive oil, then sprinkle with 1 teaspoon of kosher salt and ½ teaspoon of black pepper. Toss to coat evenly and spread into a single layer.
- Optional initial roast for extra crispy broccoli. For extra crispy broccoli, roast the florets alone for 5 minutes before adding the salmon. This step is optional but recommended for those who prefer more texture.
- Season the salmon. While broccoli roasts, season the salmon filets on both sides with the remaining ½ teaspoon kosher salt and ½ teaspoon black pepper.
- Add salmon to baking sheet. Nestle the salmon pieces among the broccoli on the baking sheet, ensuring they are spaced out evenly for proper cooking.
- Apply Caesar dressing and sprinkle cheeses. Spoon or brush about 1 to 2 tablespoons of Caesar dressing over each salmon filet. Then, sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the salmon and broccoli.
- Bake until cooked through and cheese is bubbly. Place the baking sheet in the oven and bake for 18 to 22 minutes, or until the salmon reaches an internal temperature of 145°F, the cheese is melted, bubbly, and golden brown, and the broccoli is tender with some crispy edges.
- Let the salmon rest. Remove the pan from the oven and let the salmon rest for 2 to 3 minutes to allow juices to redistribute.
- Serve immediately. Serve the salmon and broccoli straight from the pan with lemon wedges for squeezing over the top and extra Parmesan cheese if desired.
