This No-Bake Funfetti Cheesecake is a vibrant and fun dessert featuring a crunchy cookie crust, a light and creamy cream cheese filling speckled with colorful sprinkles, and a playful vanilla icing topping. Perfect for celebrations or whenever you want a delightful, easy-to-make treat without turning on the oven.

  • Total Time: 6 hours 20 minutes
  • Yield: 12 servings

Ingredients

Crust

  • 28 golden sandwich cookies (Golden Oreos)
  • 7 shortbread cookies
  • ¼ cup unsalted butter, melted

Filling

  • 16 ounces cream cheese, softened
  • 1 cup dry vanilla cake mix
  • 8 ounce tub whipped topping (Cool Whip)
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup sprinkles, divided

Topping

  • ½ cup vanilla icing

Instructions

  1. Make the crust: Add the golden sandwich cookies and shortbread cookies to a food processor and blend until fine crumbs form. Transfer the crumbs into a bowl and mix with the melted unsalted butter until well combined. Press the crumb mixture firmly into the bottom of a parchment-lined 9-inch springform pan, using the bottom of a cup to smooth it into an even layer. Place the crust in the freezer to set while you prepare the filling.
  2. Make the filling: In a large bowl, beat together the softened cream cheese, dry vanilla cake mix, whipped topping, powdered sugar, and vanilla extract until the mixture is smooth and creamy. Carefully fold in all but 2 tablespoons of the sprinkles, mixing gently to avoid color bleeding.
  3. Assemble: Spread the prepared filling evenly over the chilled crust in the springform pan. Cover the pan and refrigerate the cheesecake for at least 6 hours to allow it to set properly. For a firmer texture, freeze the cheesecake for about 3 hours before removing it from the pan.
  4. Decorate and serve: Once set, carefully remove the cheesecake from the springform pan. Transfer the vanilla icing to a piping bag and pipe decorative borders around the edge of the cheesecake. Sprinkle the remaining 2 tablespoons of sprinkles on top for a festive finish. Slice and serve chilled.

Notes

  • The crust is best chilled in the freezer to help it set firmly before adding the filling.
  • Be gentle when folding in sprinkles to prevent them from bleeding color into the filling.
  • Chilling the cheesecake for at least 6 hours is important for proper setting; overnight refrigeration is ideal.
  • Freezing the cheesecake before serving results in a denser, firmer texture.
  • You can substitute the vanilla icing with whipped cream or frosting if preferred.
