This Molasses Glazed Sweet Potatoes recipe offers a sweet and comforting side dish perfect for holiday meals or cozy family dinners. Tender boiled sweet potatoes are coated in a rich glaze of molasses, brown sugar, cinnamon, and butter, then topped with toasted pecans and miniature marshmallows before baking to golden perfection.

  • Total Time: 1 hour 20 minutes
  • Yield: 12 servings

Ingredients

Sweet Potatoes

  • 7 sweet potatoes

Glaze

  • 1/2 cup molasses
  • 1/2 tsp cinnamon
  • 1/2 cup packed light brown sugar
  • 6 tbsp butter

Toppings

  • 1 cup toasted pecans, chopped
  • 2 cups miniature marshmallows

Instructions

  1. Preheat and Prepare: Preheat your oven to 375 degrees Fahrenheit and grease a 9 x 13-inch baking dish with cooking spray to prevent sticking.
  2. Boil Sweet Potatoes: Bring a large pot of water to a rolling boil on the stovetop. Carefully place the whole sweet potatoes into the boiling water and cook for about 25 minutes until they are just tender when pierced with a fork.
  3. Cool and Peel: Remove the potatoes from the boiling water and allow them to cool enough so you can handle them safely. Peel off the skins by hand, which should come off easily after boiling, then cut the peeled sweet potatoes into small cubes and place them in a large mixing bowl.
  4. Make the Molasses Glaze: In a small saucepan over medium heat, combine molasses, cinnamon, brown sugar, and butter. Stir continuously until the mixture is smooth and fully combined, which should take about 5 minutes. Remove from heat when done.
  5. Coat Potatoes: Pour the warm glaze over the cubed sweet potatoes and toss gently but thoroughly to coat all the pieces evenly with the glaze.
  6. Assemble in Baking Dish: Transfer the glazed sweet potatoes to the prepared baking dish. Evenly sprinkle the toasted chopped pecans over the top, then cover the entire dish with the miniature marshmallows.
  7. Bake: Place the baking dish in the preheated oven and bake for 30 minutes, or until the marshmallows are golden brown and melted, and the dish is heated through.

Notes

  • You can substitute brown sugar with maple syrup for a different flavor profile.
  • For a crunchier top, broil the dish for the last 2-3 minutes but watch closely to avoid burning the marshmallows.
  • To add a touch of spice, sprinkle a pinch of nutmeg or ground ginger into the glaze mixture.
  • This dish can be prepared a day ahead; assemble and refrigerate, then bake before serving.
  • Make sure to toast the pecans lightly in a dry pan or oven to enhance their flavor.
