Ingredients

Miso Marinade

  • 2 tablespoons white miso paste
  • 1 tablespoon salt reduced soy sauce (or ½ tablespoon regular soy sauce)
  • 1 tablespoon mirin or rice vinegar
  • 2 teaspoons honey
  • 1 teaspoon sesame oil

Main

  • 12 oz / 340 g salmon fillet (or 2 x 6 oz / 170 g fillets)
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

  • Jasmine rice
  • Sliced cucumber
  • Pickled ginger

Instructions

  1. Prepare the marinade: In a deep bowl, add the white miso paste, soy sauce, honey, mirin (or rice vinegar), and sesame oil. Whisk them together until the mixture is smooth and free of any clumps.
  2. Marinate the salmon: Place the salmon fillets flesh side down into the bowl with the marinade. Coat the salmon thoroughly with the mixture. Cover and let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for best flavor, especially in warmer conditions.
  3. Preheat and prepare for broiling: Set your oven to the broiler setting at 480℉ / 250℃. Line a baking sheet with aluminum foil and lightly oil it to prevent the salmon from sticking. Remove the salmon from the fridge and place it skin side down on the prepared baking sheet, reserving the leftover marinade in the bowl.
  4. Broil the salmon: Place the baking sheet in the middle rack of the oven. Broil the salmon for 6-9 minutes, depending on your preferred level of doneness. Watch carefully to avoid overcooking.
  5. Caramelize the glaze: Remove the salmon carefully from the oven and brush it with some of the reserved marinade. Move the baking sheet to a higher rack closer to the broiler and cook for an additional 2-3 minutes until a golden caramelized glaze develops. Keep a close eye to prevent burning.
  6. Garnish and serve: Garnish the cooked salmon with sliced green onions and sesame seeds. Serve immediately alongside jasmine rice, sliced cucumber, and pickled ginger for a balanced and flavorful meal.
