- 3 Tbsp raw cacao powder
- 1 tsp peppermint extract (food grade)

- 2 Tbsp water
- Pinch of sea salt

Instructions
- Prepare Baking Sheet: Line a small baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Combine Ingredients: Add the pitted medjool dates, almond flour, desiccated coconut, raw cacao powder, peppermint extract, vanilla extract, water, and sea salt to a large food processor. Pulse until the mixture forms a sticky mass that clumps together.
- Roll Balls: Using your hands, scoop about a tablespoon of the mixture and roll it into a smooth ball. Repeat with the remaining mixture.
- Optional Toppings: If desired, place mini chocolate chips or extra coconut flakes in small dishes. Roll each ball gently into your chosen topping to coat. This step can be skipped if you prefer plain balls.
- Freeze to Set: Arrange the rolled balls on the prepared baking sheet in a single layer. Freeze for 1 hour to allow them to firm up and hold their shape.
Notes
- Medjool dates should be soft and fresh for best blending results.
- If mixture is too dry, add a little more water tablespoon by tablespoon.
- Store finished mint chocolate balls in an airtight container in the freezer or fridge.
- For a stronger mint flavor, you can add a bit more peppermint extract, but do so cautiously as it is potent.
- These balls make a great energy boost before or after workouts or a healthy dessert alternative.
