Ingredients
Main Ingredients
- 4 tablespoons butter (melted, divided)
- 2 cups sour cream
- 1 recipe condensed cream of mushroom soup (approx. 10.5 ounces)
- 2 cups shredded sharp cheddar cheese
- 1/3 cup sliced green onions
- 3/4 to 1 teaspoon kosher salt (to taste)
- 1/2 teaspoon freshly ground black pepper (to taste)
- 1/2 cup milk
- 32 ounces frozen diced hash brown potatoes
- 1 cup crushed cornflakes
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350℉ (180℃) and grease a 9×13 inch baking dish to prevent sticking and ensure even baking.
- Make the Cheese Mixture: Melt 2 tablespoons of butter in a deep-sided saucepan over low heat, then remove from heat. Add in the sour cream, condensed cream of mushroom soup, shredded sharp cheddar cheese, and sliced green onions. Season the mixture with kosher salt and freshly ground black pepper to taste. Stir in the milk until fully combined, creating a creamy cheese sauce.
- Combine with Potatoes: Add the frozen diced hash brown potatoes into the saucepan and stir gently to coat the potatoes evenly with the creamy cheese mixture. Transfer this combined mixture into the prepared baking dish, spreading it out evenly.
- Prepare Topping and Bake: Mix the crushed cornflakes with the remaining 2 tablespoons of melted butter until all flakes are coated. Sprinkle this buttery cornflake topping evenly over the potato mixture in the dish. Place the casserole on the middle oven rack and bake for 1 hour, rotating the pan halfway through to ensure even cooking and a golden crispy topping.
Notes
- You can adjust the amount of salt and pepper according to your taste preferences.
- Using sharp cheddar cheese gives a nice tanginess, but you can substitute with your preferred cheese if desired.
- For extra crispy topping, you can broil the casserole for 1-2 minutes at the end but watch closely to avoid burning.
- If you prefer a lower fat version, substitute sour cream with Greek yogurt and reduce the cheese amount.
- Make sure to thaw diced potatoes slightly or mix gently to avoid clumps during mixing.
