- 1/2 tsp pepper
Instructions
- Rinse and drain chickpeas: Drain the canned chickpeas thoroughly, then transfer them to a strainer and rinse under cool running water until the water runs clear to remove excess starch and canning liquid.
- Marinate chickpeas: In a large mixing bowl, combine the rinsed chickpeas with lemon juice, extra virgin olive oil, paprika, and salt. Stir the mixture well to ensure the chickpeas are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes and up to an hour to let the flavors meld.
- Prepare vegetables and herbs: While the chickpeas are marinating, dice the tomatoes, Persian cucumbers, yellow bell pepper, and red onion into uniform 1/2-inch pieces. Finely mince the fresh parsley and mint to maximize their flavor.
- Combine salad ingredients: Add the diced vegetables and minced herbs to the marinated chickpeas. Toss gently but thoroughly to combine all ingredients. Taste the salad and adjust seasoning by adding more salt, pepper, or lemon juice until the flavors are bright and balanced.
