Instructions

  1. Preheat oven and prepare topping: Preheat your oven to 425°F (220°C). In a bowl, combine the chopped sun-dried tomatoes, mayonnaise, minced garlic, and dried oregano to create a flavorful topping mixture.
  2. Prepare fish: Line a baking sheet with parchment paper and place the halibut fillets skin side down on the sheet. Lightly season the fillets with kosher salt and freshly cracked black pepper. Evenly spread the tomato and mayo mixture over the top of each fillet.
