Ingredients

Masala Egg Mixture

  • 2 large eggs
  • 2 tablespoons red onion (finely minced)
  • 1 teaspoon green chili (finely minced, jalapeno or other spicy chili works too)
  • ¼ teaspoon ground turmeric
  • ½ teaspoon kosher salt
  • 2 tablespoons cilantro (finely chopped)
  • ⅓ cup milk (or water)

Bread

  • 2 slices bread (sourdough, multigrain or whole wheat)

To Serve

  • 2 tablespoons ketchup
  • ¼ cup cilantro mint chutney

Instructions

  1. Prepare the masala egg mixture: In a wide bowl large enough to fit the bread slices, whisk together finely minced red onion, green chili, ground turmeric, kosher salt, chopped cilantro, and milk. Add the eggs and whisk vigorously for about a minute until the mixture is well combined and smooth.
  2. Soak the bread slices: Dip one slice of bread into the masala egg mixture. Gently press down with a fork to ensure the bread absorbs the egg mixture fully. Flip the bread and repeat on the other side. Repeat this for the second slice of bread as well.
  3. Cook the bread on the stovetop: Heat a non-stick or cast-iron pan over medium heat and add ½ teaspoon of oil. Carefully place the soaked bread slice on the pan. Optionally spoon and spread some extra minced onions from the egg mixture on top for added flavor. Cook for about a minute or until the underside turns golden brown.
  4. Flip and cook the other side: Turn the bread over and cook the other side for another minute until it becomes golden brown and crisp. Repeat the cooking process with the second slice of bread.
  5. Serve hot: Plate the masala French toast hot and serve immediately with ketchup and cilantro mint chutney on the side for dipping.
