Instructions
- Heat Oil and Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add minced garlic and cook for 30–60 seconds until fragrant. Then add diced onion and sliced carrots and cook for 5–6 minutes until they become soft and translucent.
- Add Broth and Seasonings: Stir in chicken broth, chopped sun-dried tomatoes, dried oregano, dried basil, chili flakes (if using), salt, and pepper. Bring the mixture to a gentle simmer to develop the flavors.
- Incorporate Chicken: Add the cooked shredded chicken to the simmering broth and let it cook for about 5 minutes to heat through and absorb the flavors.
- Add Cream: Reduce the heat to low and slowly stir in the heavy cream, mixing gently to create a creamy texture without curdling.
- Wilt Spinach: Add the baby spinach to the pot and cook just until wilted, preserving its bright green color and nutrients.
- Finish with Cheese: Stir in the grated Parmesan cheese until melted and fully integrated into the soup, then remove the pot from heat.
- Season and Garnish: Taste the soup and adjust salt and pepper if needed. Garnish with fresh parsley before serving to add a burst of fresh flavor and color.
Notes
- Use cooked shredded chicken from leftover rotisserie chicken or pre-cooked chicken to save time.
- Sun-dried tomatoes add a rich, tangy flavor, but if unavailable, diced roasted red peppers can be a substitute.
- For a lighter version, substitute heavy cream with half-and-half or coconut cream for a dairy-free option.
- Serve the soup with crusty bread or over cooked rice for a heartier meal.
