Ingredients
Chicken
- 2 lbs chicken breast or chicken thighs (4 large or 6 smaller breasts)
- 1-1 1/2 teaspoons kosher salt
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
Vegetables
- 1 lb brussels sprouts, trimmed and halved
- 1 lb (2 medium) sweet potatoes, cut into 1-inch pieces
- 1 red onion, cut into 1/2-inch wedges
Glaze
- 2 tablespoons Dijon mustard
- 2 tablespoons spicy brown mustard (or more Dijon mustard as a substitute)
- 1/4 cup maple syrup
- 1/4 cup olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon cinnamon
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it to prevent sticking.
- Prepare the Chicken: In a small bowl, mix 1-1 1/2 teaspoons kosher salt, 1 teaspoon dried thyme, and 1/2 teaspoon garlic powder. Rub this seasoning evenly over the chicken breasts or thighs, ensuring all sides are coated.
- Prepare the Vegetables: Trim and halve the brussels sprouts. Peel and cut the sweet potatoes into 1-inch pieces. Cut the red onion into 1/2-inch wedges. Arrange all the vegetables in a large bowl or directly on the baking sheet.
- Make the Glaze: In a separate bowl, whisk together Dijon mustard, spicy brown mustard, maple syrup, olive oil, apple cider vinegar, garlic powder, dried thyme, cinnamon, kosher salt, and ground black pepper until fully combined and smooth.
- Toss Vegetables with Glaze: Pour about two-thirds of the glaze over the vegetables and toss to coat them evenly.
- Arrange on Sheet Pan: Place the seasoned chicken on the prepared sheet pan. Surround the chicken with the glazed vegetables. Drizzle the remaining glaze over the chicken pieces for extra flavor.
- Roast in Oven: Roast everything in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C), and the vegetables are tender and golden brown.
- Rest and Serve: Remove the sheet pan from the oven. Let the chicken rest for 5 minutes before slicing. Serve the chicken alongside the roasted fall vegetables, spooning any pan juices over the top for added flavor.
Notes
- You can use chicken thighs instead of breasts for juicier meat.
- Adjust the amount of maple syrup based on your preferred sweetness level.
- Use parchment paper on the sheet pan for easy cleanup.
- Make sure to check the internal temperature of the chicken to ensure it is fully cooked.
- If you prefer spicier flavors, add a pinch of cayenne pepper to the glaze.
