Guacamole Filling
- 3 small avocados, or two medium sized avocados
- 1 cup black beans
- 1/2 cup diced tomato
- 1/2 cup diced red bell pepper
- 1/3 cup diced red onion
- 1/4 cup diced jalapeno, or however much you like
- 1-2 cloves garlic, minced
- 1 small handful chopped cilantro
- 2 tablespoons fresh lime juice, or more if desired
- Salt, to taste
Tacos
- 8 regular sized corn tortillas
- Taco toppings of your choice (such as shredded cheese, sour cream, salsa, chopped onions, or lettuce)
Instructions
- Prepare the Avocado: Peel, pit, and dice the avocados. Add them to a medium-sized bowl and use a fork to mash them to your preferred texture, whether chunky or smooth.
- Mix the Filling: Add black beans, diced tomato, red onion, jalapeño, red bell pepper, minced garlic, chopped cilantro, fresh lime juice, and a pinch of salt to the mashed avocado. Stir everything well to combine and adjust seasoning with more salt if needed.
- Warm the Tortillas: Heat the corn tortillas on the stovetop using a pan or carefully over an open flame until warm and pliable. Lay the warmed tortillas flat on a surface.
- Assemble the Tacos: Spoon a few generous spoonfuls of the loaded guacamole onto one side of each tortilla. Fold the tortilla over to enclose the filling, making a taco shape. Repeat for all tortillas.
- Add Toppings and Serve: Top the tacos with your favorite taco toppings such as shredded cheese, sour cream, salsa, or fresh vegetables. Serve immediately and enjoy!

- You can adjust the amount of jalapeño to control the spice level.
- For extra protein, consider adding grilled chicken or tofu if desired.
