Ingredients

Guacamole Filling

  • 3 small avocados, or two medium sized avocados
  • 1 cup black beans
  • 1/2 cup diced tomato
  • 1/2 cup diced red bell pepper

  • 1/4 cup diced jalapeno, or however much you like
  • 1-2 cloves garlic, minced
  • 1 small handful chopped cilantro
  • 2 tablespoons fresh lime juice, or more if desired
  • Salt, to taste

Tacos

  • 8 regular sized corn tortillas
  • Taco toppings of your choice (such as shredded cheese, sour cream, salsa, chopped onions, or lettuce)

Instructions

  1. Prepare the Avocado: Peel, pit, and dice the avocados. Add them to a medium-sized bowl and use a fork to mash them to your preferred texture, whether chunky or smooth.
  2. Mix the Filling: Add black beans, diced tomato, red onion, jalapeño, red bell pepper, minced garlic, chopped cilantro, fresh lime juice, and a pinch of salt to the mashed avocado. Stir everything well to combine and adjust seasoning with more salt if needed.
  3. Warm the Tortillas: Heat the corn tortillas on the stovetop using a pan or carefully over an open flame until warm and pliable. Lay the warmed tortillas flat on a surface.
  4. Assemble the Tacos: Spoon a few generous spoonfuls of the loaded guacamole onto one side of each tortilla. Fold the tortilla over to enclose the filling, making a taco shape. Repeat for all tortillas.
