Ingredients
Crust
- 40 golden Oreo cookies
- ½ cup unsalted butter (melted and cooled)
Cream Cheese Layer
- 8 ounces cream cheese (softened to room temperature)
- ½ cup confectioners sugar
- 1 ½ teaspoons lemon zest
- 8 ounces whipped topping (half of the 16 ounces, divided)
Pudding Layer
- 2 packets (3.4 oz each) lemon pudding mix
- 3 cups cold milk
- 8 ounces whipped topping (remaining half of the 16 ounces)
Garnish (Optional)
- 4 golden Oreo cookies (reserved for crumbling)
- Lemon slices for garnish
Instructions
- Prepare Crust: Set aside 4 whole cookies for garnishing. Crush the remaining 36 golden Oreo cookies using a food processor or by placing them in a plastic ziplock bag and rolling over with a rolling pin until finely crumbled.
- Combine Crust Ingredients: In a large mixing bowl, mix the crushed Oreo cookies with the melted and cooled unsalted butter until well combined.
- Form Crust: Press the cookie and butter mixture evenly into the bottom of a 9×13 inch baking dish using your hands or the back of a spatula. Place the dish in the refrigerator to chill while you prepare the next layers.
- Make Cream Cheese Layer: In a large bowl, beat the softened cream cheese with the confectioners sugar and lemon zest until smooth and creamy. Gently fold in half of the whipped topping (8 ounces) until well incorporated.
- Assemble Cream Cheese Layer: Spread the cream cheese mixture evenly over the chilled Oreo crust. Return the dish to the refrigerator to keep this layer firm while preparing the pudding.
- Prepare Lemon Pudding: In a medium bowl, whisk together the dry lemon pudding mix with the cold milk until fully combined and smooth. Allow it to thicken slightly for about 5 minutes as per pudding mix instructions.
- Layer Pudding: Spread the thickened lemon pudding evenly over the cream cheese layer in the baking dish.
- Add Whipped Topping: Spread the remaining whipped topping (8 ounces) evenly over the lemon pudding layer, creating the top cream layer.
- Garnish: Crumble the reserved 4 golden Oreo cookies and sprinkle them over the top for a decorative and tasty finish. Add optional lemon slices for an extra fresh look.
- Chill and Serve: Refrigerate the dessert for at least 1 to 2 hours or preferably overnight to let the layers set completely. Slice into pieces and serve chilled for best flavor and texture.
Notes
- Make sure the cream cheese is softened to room temperature to avoid lumps in the cream cheese layer.
- Chilling the crust before adding cream cheese filling helps prevent it from becoming soggy.
- For a firmer pudding layer, allow the pudding to set in the refrigerator for 5-10 minutes before spreading.
- This dessert is best served cold and keeps well refrigerated for up to 3 days.
- You can use light or reduced-fat versions of the ingredients to reduce calories, but the texture might vary slightly.
