Ingredients
Italian Ice Base
- ½ cup freshly squeezed lime juice (from about 3-4 limes)
- ½ cup freshly squeezed lemon juice (from about 2 lemons)
- Zest of 2 lemons and 3-4 limes
- 1 cup granulated sugar
- 2 cups water
Instructions
- Zest and Juice Citrus: Zest the lemons and limes thoroughly, then juice them to capture fresh lemon and lime juice needed for the Italian ice base.
- Combine Sugar and Zest: In a small bowl or on a plate, mix the granulated sugar with the citrus zest by massaging them together with your fingers to release the essential oils and infuse the sugar with citrus flavor.
- Dissolve Sugar Mixture: Pour the sugar and zest mixture, lemon and lime juice, and water into a medium-sized saucepan over medium-low heat. Stir and cook gently until the sugar is completely dissolved into the liquid.
- Steep Zest: Remove the saucepan from heat and allow the zest to steep in the hot mixture for 20 to 30 minutes to intensify the citrus flavor.
- Strain and Chill: Strain out the zest with a fine mesh sieve and transfer the liquid base to the refrigerator. Chill thoroughly for at least 8 hours or overnight until cold.
- Churn Italian Ice: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions until the texture is no longer wet and slushy but smooth and icy.
- Serve or Freeze: Enjoy the Italian ice immediately for a soft texture or transfer to the freezer to harden. Before scooping from the freezer, let it soften for 10-15 minutes for easy serving.
Notes
- Ensure the citrus zest is finely grated to maximize flavor infusion.
- If you don’t have an ice cream maker, you can freeze the mixture in a shallow container, stirring every 30 minutes to break up ice crystals until evenly frozen.
- Adjust sugar quantity based on your desired sweetness and the tartness of your lemons and limes.
- This recipe yields about 4 servings.
- For a boozy twist, add a splash of limoncello or vodka during the chilling process.
