Ingredients

Chicken and Marinade

  • 2 pounds boneless skinless chicken breasts
  • ½ cup lemon juice

Vegetables and Skewers

  • 2 bell peppers, cut into 1” pieces
  • 1 onion (red, yellow, etc.), cut into 1” pieces
  • 20 bamboo skewers soaked in warm water for at least 1 hour

Instructions

  1. Marinate Chicken: Cut the chicken breasts into 1-inch cubes or strips, according to your preference for kabobs. Place the chicken pieces into a glass container with a lid or a plastic bag inside another container to avoid any leaks.
  2. Prepare Marinade: In a medium bowl, whisk together lemon juice, olive oil, Dijon mustard, turmeric, smoked paprika, onion powder, minced garlic, sea salt, pepper, and fresh dill until well combined.
  3. Combine Chicken and Marinade: Pour the marinade over the chicken pieces and turn them to coat thoroughly. Cover and refrigerate, allowing the chicken to marinate overnight or for at least 6 hours to absorb all the flavors.
  4. Prepare Skewers and Veggies: Soak bamboo skewers in warm water for at least 1 hour to prevent burning during grilling. While waiting, cut bell peppers and onion into 1-inch pieces.
  5. Assemble Kebabs: Using clean hands or plastic gloves to avoid staining, thread the marinated chicken pieces alternately with bell pepper and onion pieces onto the soaked skewers until all ingredients are used.
  6. Grill Kebabs: Preheat grill to medium heat. Place the assembled kebabs on the grill and cook for about 5 minutes on the first side. Flip and grill for an additional 3 to 5 minutes on the second side, or until the chicken reaches an internal temperature of 160°F (71°C) and is fully cooked.
