Ingredients
Shrimp
- 1 pound shrimp, thawed, tails removed
- 1 Tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp chili flakes
- Salt and pepper, to taste
Pasta & Sauce
- Approx. 5 ounces dry pasta (approx. 140 grams; enough for 2 people)
- 3 Tbsp olive oil, divided
- 5 cloves garlic, minced
- 4 cups fresh spinach
- 1/2 lemon, juice and zest
- 1/4 cup fresh basil or parsley, chopped
- Salt and pepper, to taste
- Optional: fresh parmesan, to serve
Instructions
- Prep Ingredients: Thaw the shrimp completely and remove tails and shells. Mince the garlic cloves finely. Zest the lemon peel carefully, then juice half a lemon. Chop fresh basil or parsley and set aside.
- Cook Pasta: Bring a large pot of salted water to a boil. Add the dry pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta well and return it to the pot to keep warm.
- Season Shrimp: Pat the shrimp dry thoroughly using paper towels. Place them in a bowl and toss with 1 tablespoon of olive oil, smoked paprika, chili flakes, salt, and pepper until evenly coated. Set aside.
- Sauté Shrimp: Heat a large pan over medium-high heat. Add the shrimp in batches, making sure not to overcrowd the pan so each shrimp sears properly. Cook shrimp for about 1-2 minutes per side until they turn opaque and are cooked through. Remove shrimp from pan and place into a clean bowl.
- Cook Garlic and Spinach: To the same pan, add 1 tablespoon olive oil. Add minced garlic and cook for 2-3 minutes, stirring frequently, until it is lightly browned and fragrant. Add fresh spinach and sauté for 1-2 minutes until wilted, stirring continuously to combine.
- Combine All: Turn off the heat. Add the cooked pasta into the pan with garlic and spinach. Stir in lemon zest, lemon juice, remaining 2 tablespoons olive oil, cooked shrimp, and fresh herbs. Season with salt and pepper to taste, and toss everything gently but thoroughly to mix.
- Serve: Plate the pasta while hot. Optionally, sprinkle freshly grated parmesan cheese on top. Enjoy immediately for the best flavor and texture.
Notes
- You can use any type of pasta you like such as spaghetti, linguine, or penne.
- If you prefer less spice, reduce or omit the chili flakes.
- For a dairy-free version, skip the parmesan or substitute with a plant-based cheese.
- To save time, prepare garlic and herbs while pasta water heats.
- Ensure shrimp is thoroughly thawed to cook evenly and quickly.
