Ingredients
Salmon and Seasoning
- 1 tablespoon olive oil
- 2 lb Atlantic salmon, cut into fillets
- 1 teaspoon salt
- 1 teaspoon black pepper
Flavorings
- 1 shallot, sliced
- 1 lemon, sliced
- 3 fresh dill sprigs, plus more for serving
- 1/2 cup white wine
- 2 tablespoons unsalted butter
Instructions
- Preheat Oven: Preheat your oven to 300°F (150°C) to prepare for gentle, even cooking of the salmon fillets.
- Prepare Salmon: Pat the salmon fillets dry with paper towels to ensure a good texture. Season both sides evenly with salt and black pepper for balanced flavor.
- Arrange in Baking Dish: Drizzle olive oil in a shallow baking dish to prevent sticking. Place the salmon fillets skin side down, then layer the sliced shallots, lemon slices, and fresh dill sprigs evenly over and around the fish.
- Add Wine and Butter: Pour the white wine carefully into the baking dish around the fillets to add moisture and depth of flavor. Dot the tops of the salmon with unsalted butter to enrich the sauce and promote tenderness.
- Bake Covered: Cover the baking dish tightly with aluminum foil to trap steam. Bake in the preheated oven for 18 to 20 minutes, or until the salmon flakes easily with a fork, indicating it is fully cooked and tender.
- Garnish and Serve: Remove from oven, uncover, and top with additional fresh dill for a bright herbal finish. Serve immediately for best flavor and texture.
Notes
- For best results, use fresh wild-caught Atlantic salmon if possible for optimal flavor and texture.
- If you do not have white wine, you can substitute with a mild vegetable or chicken broth.
- Make sure the foil is sealed well to create steam during cooking, which helps keep the salmon moist.
- Check the salmon at 18 minutes to avoid overcooking, which can dry out the fish.
- This recipe pairs wonderfully with steamed vegetables or a light quinoa salad for a balanced meal.
